How to Make the Ultimate Butter Board

The new trend in entertaining is an appetizer board devoted to the very best of one of western cooking’s most essential ingredients…Butter! We have always appreciated a good cheese and charcuterie board. As well as boards dedicated to serving caviar. Or cookies. Or candy. A butter board is a different type of beast—a communal serving board dedicated to a perfect, singular ingredient. Chef Joshua McFadden shared a butter board in his cookbook, Six Seasons: A New Way with Vegetables, which inspired TikToker Justine Snacks. Justine’s butter board now has 2.8 million views on TikTok and a trend is born. Even our own Test Kitchen has contributed its own version.

Topped with fresh edible blossoms and herbs, the KitchenAid blossom butter is every bit as beautiful as it is delicious. We may never go back to store-bought.

Herb and Flower Butter

Heavy cream is the only ingredient required to make homemade butter. Any extra flavor elements are up to you. Flaky sea salt, such as Maldon, is a popular addition. Fresh herbs and the petals from edible blossoms offer their own subtle flavor. Spread the homemade butter on a marble board or slab, then sprinkle the added ingredients on top.

Servings 1 cup butter + 1 cup buttermilk

Ingredients

Butter

  • 1 pint heavy cream 38% fat content
  • Cold water

Garnishes

  • 1 sprig each thyme, dill and flat-leaf parsley leaves, roughly torn
  • 1 green onion, cut on the diagonal
  • 3 tbsp (20g)  any combination of edible flower petals of your choice, such as anise hyssop, marigolds, pansies, calendulas, nasturtiums or borage. Watercress and microgreens work well too.
  • ¼ tsp flaky sea salt
  • ¼ tsp toasted and cracked coriander seed
  • Pinch cracked red peppercorns

Instructions

Whip Butter

  • Pour cream into the bowl of your stand mixer. Using the whisk attachment, begin beating cream at Speed 1, gradually increasing to Speed 10 as the mixture thickens.
  • After several minutes, whipped cream will form. Continue mixing. After several more minutes the fat solids will separate from the liquids, and you'll see clumps of butter fat begin to form, leaving liquid buttermilk in the bottom of the bowl. If liquid begins to splatter, use a pouring shield or lay a small towel over the top of the stand mixer.

Separate from Buttermilk

  • Strain fat solids from the buttermilk using a fine mesh strainer or cheesecloth over a bowl to catch the buttermilk. Return fat solids to the stand mixer bowl without the buttermilk and whip at Speed 10 again. You may be able to squeeze a bit more buttermilk out. 
  • Scrape butter out of the whisk attachment and place in the strainer. Pour cold water over butter to rinse away any remaining buttermilk. Discard water and rinse butter twice more. You now have spreadable, unsalted butter ready to be garnished. 

Add Herbs and Flowers

  • Tear herb leaves and flower petals into small bite size pieces. Remove any stalks and sepals. You don’t want a whole mouthful of a flower in your butter. 
  • Spread butter on a tray and sprinkle with flowers, herbs and flavors. You can now spread this on bread or crackers.
