When it comes to yeast bread, there are few recipes as simple to make as basic focaccia—especially when you have a good step-by-step recipe in hand. Yes, it’s delicious plain, or sprinkled with a collection of seasonal herbs, but achieves the level of a-ha moment when embellished with the season’s best produce.

Focaccia with Fresh Heirloom Tomatoes

Heirloom tomatoes at their peak need little adornment. Arranged in an ombre pattern that makes the most of their unique color spectrum, and sprinkled simply with sea salt and fresh basil, summer tomatoes make for a wow-worthy dish. You can make the focaccia in advance, then load it up with cut tomatoes just before serving.

Focaccia with Cherries, Honey & Thyme

Round-up those cherries while they last, since cherry season is almost at its end. Fresh thyme and a drizzle of honey add a surprisingly complementary balance of flavors. A good cherry pitter wraps up the prep in a matter of minutes.

Focaccia with Grapes & Walnuts

Red, seedless grapes are always in season at the market and make a ready addition to this fruit-laden focaccia. Swap them for seasonal varieties when harvest begins next month. Try other seedless varieties such as deep purple Concord grapes or small, green-hued Champagne grapes.
